She entered nurses training at the Jean Mance School of nursing, and Heaton Hospital in Montpelier, graduating in 1956 as a Registered Nurse. She worked in Boston during her training caring for young polio patients. On September 1, 1956, she married Clayton "Tink" Copping in the Grace Methodist Church in Plainfield. They eventually moved to East Montpelier in 1962 where they raised their family and were active members of the Old Brick Church where she taught Sunday School with her husband, sang in the choir, and was church organist. Joyce’s memberships included both churches and the Eastern Star. Her many passions included sewing, quilting, rug hooking, gardening, and her beautiful flower gardens! Dancing, scrapbooking, reading, gospel music, and baking! She enjoyed immensely going on country road trips with Robin and outings of any kind! She and Tink traveled extensively, most notably to Alaska, Nova Scotia, Virginia, Wisconsin, Montana, and San Diego to see Tink's Navy ship the USS Midway.
